Simple but sound opening vs e4?

Unanswerable. Chess is difficult at all levels. Carlsen with other masters make it look easy. There are enough sound openings against 1. e4.

The two I know that give Black the best winning chances are Sicilian and Modern Defenses. They do the best of nullifying White's opening advantage.

To explain for the normal player 1...c5 creates an imbalance immediately creating asymmetrical colorful games most of the time.

1...g6 does not commit Black to an immediate plan. He can react to White's play well.

Even the copycat 1...e5 gives White too much imo. Other openings are worse forms of c5, g6, and e5 forever in classic Chess.
There is no simple thing against e4.
either you play actively and ready from complex position or you try to simplify and get into too passive position.

But if you want to go solid, for sure Ruy Lopez, perhaps Bc5 lines or early Nf6xe4 lines.
Or Petroff (I recommend to go through come Caruana games).
I found both of them very good, solid. There is no easy way for white to launch king side attack quickly neither whole game will depend on one single tempo, like f.e. in Sicilian or french.

But then, a scotch Gambit can occur and tbh, Scotch gambit is much more fun for white than for black
i don't know that a simple defense exists. the petroff seems to be pretty sound, though.

What do yoy mean? Isn’t the knight on f3? How does the f4 variation occur?

That's true though sir but still I would say that Sicilian is much interesting than french and caro kann. U may know more better than me on this because u are more experienced than me
