I did 20 or so underpromotion puzzles and all of them required under promotion into only a knight.
i have the same problem! not even a bishop. it made them all super easy

Why would you ever need to underpromote to something other than a knight?

Underpromotions into rook and bishop are extremely rare indeed ...

Here is an example of a bishop promotion.
Only move is to promote the pawn.
Rook and Queen lead to stalemate immediately.
Knight promotion can be stopped by king leading to inevitable draw.
Bishop deletes most of black's pawns.

I underpromoted to a hedgehog once and it got run over by a rook..
Like other people said, singling out the theme underpromotion is nice to learn some of the opportunities when it makes sense to do so, but other that that its going to be a knight 99% of the time and be about as hard as the captcha puzzles if you know that in advance..
