option to disable being given extra time

I'd like the option to turn off the add time function as well. I've had similar experiences with childish players who use the add time function to gloat about their advantage or soon-to-be mate. (Although it is amusing to make a comeback that would normally have not been possible without their generous "gift" of time.)

Of course, not all players add extra time for antagonistic reasons; some do it as a gesture of courtesy to their opponent. Regardless, for those players who prefer strict time controls, having the ability to turn off extra time would allow for a more distraction-free game.
As you seem to have recognized immediately after stating it, that's a pretty bad assumption to make. I never let games hang—if I know I'm lost, I either resign or press on and hope for luck. I think it's a pretty small minority of players that would have the patience to sit staring at an open tab of a lost chess game for minutes on end just to perturb their opponent.

I think your method of "scolding" is pretty rare, and, frankly, irrational. The use of giving additional time I identified in the original post I think is more common, and the feature I request would allow players to avoid dealing with it.

No scolding intended learningchess just reasoned disagreement, my personal opinion is that both leaving the game and adding extra time in order to gloat are symptoms of the same egotistical entitlement some players suffer on here who only care about rating points.

We're talking about systematic tools that could prevent bad behaviour for the serious players who don't want the distractions.

At the same time I wouldn't want any unilateral tool that would stop me from having long games capable of adding time and giving take backs for studying different branches in real time.

An opt out the same as what is already available in preferences for takebacks seems like a great middle ground.

I was simply pointing out that you were using a tool for an unintended function, so what is needed is better tools, not players having to diy tools to serve their own 'justice'.
