Why do people play games here with no increment?

Look at me for an example :(
I have started playing with no increment because it makes you disciplined about your time management. I play 30 minute time control though so have plenty of time to think and calculate. If I played 15 + 10 instead I would let myself get into time trouble relying on the increment to finish the game.
Ready to win, up 5 or 10 points, and with far distance from server or bad connection = lose. Is this what chess is about? Impossible for me to get in 3-5 moves in a second like I see others can get, premoves or otherwise.

Then play classical?
Because i am almost always faster than my opponent, also i know if i play the rapid i will have to concentrate max 20 minutes.
Played two 3-2 games, both times opponent time went to zero but I get the loss. This site is incredible.
